INGREDIENTS
- 2 cups of protein (shredded chicken, pork, jackfruit, etc.)
- 1 onion
- 2 cloves garlic
- 1 jalapeño
- 30 ounces canned diced tomatoes
- 32 ounces chicken or vegetable stock
- 1 cup frozen corn
- Juice of 1 lime, plus more for serving
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- Salt and black pepper
- Olive oil
- Torilla strips
- 1 bunch cilantro
